Can you make the chocolate stout cake ahead of time? Yes. Store the cake without any frosting in an airtight container for five days.  

You could even freeze the baked cake for a few months. Cover the cake in a double layer of food wrap. Then take it out of the freezer to thaw for a few hours. You will have a sweet treat on hand whenever unexpected visitors stop by. 

After the cake has been decorated with whipped frosting, keep it in the refrigerator for 1-2 days. But it is unlikely this tasty cake will even last that long!  

 

Ingredients

For the cake

  • 250 ml Guinness   

  • 250 g of unsalted butter   

  • 75 g of Venchi cocoa powder   

  • 400 g of caster sugar   

  • 150 ml of sour cream   

  • 2 large eggs   

  • 1 tablespoon of vanilla extract 

  • 275 g of flour   

  • 2 and a half tablespoons of baking soda   

 

For the frosting

  • 300 g of cream cheese   

  • 150 g of powdered sugar   

  • 125 g of whipping cream

Preparation Time

Step-by-Step Directions 

For the cake   

  1. Preheat the oven to 180 degrees. Then, butter and line a 23cm cake tin.  

  1. In a saucepan, pour in the Guinness. Then turn on the heat to low.  

  1. Next, add the butter, a couple of spoons at a time.  

  1. Once all the butter is melted, begin to mix in the sugar and cocoa powder.  

  1. Use a whisk to combine the ingredients well. Then set aside.  

  1. In a bowl, beat the eggs, sour cream, and vanilla essence.  

  1. Add the beer mixture to the bowl of beaten eggs. Whisk until well combined.  

  1. With a sieve, sift in the flour and baking soda.  

  1. Next, add the flour and baking soda to the cake batter.  

  1. Into the greased cake tin, pour the cake mixture.  

  1. Bake in the oven for 45 minutes to 1 hour. Test if the cake is ready with a wooden toothpick. Poke it into the cake. The toothpick should come out clean.  

  1. The cake is very moist, so leave it to cool completely inside the tin.  

  1. Once the cake is completely cooled, place it on a cake stand or platter.  

  1. Time to start on the frosting.  

 

For the frosting   

  1. Whisk the cream cheese. Stop when it is smooth.  

  1. Add the powdered sugar. Use a sieve for extra fluffiness.  

  1. In a new bowl, whip the whipping cream. Stop when soft peaks form.  

  1. To the cream cheese mixture, add about a third of the whipping cream.  

  1. When well blended, fold in the remaining whipped cream. Use a spatula to combine the ingredients gently.   

  1. Use a damp spatula to decorate the top of the cake with the frosting. Now serve and indulge!
